Our Heritage

A story more than a century in the making.

Every family has a story. Ours begins with a name.

Our family proudly traces its heritage to Gerardo Barrios, the 19th-century President of El Salvador whose vision helped establish coffee as one of the defining industries of Central America. More than 150 years later, coffee continues to shape our family’s story.

The Legacy

From the mountains of Marcala to the streets of Sydney.

That legacy found its way to the mountains of Marcala, Honduras, where our great-grandparents, Adán Bonilla Contreras and Rosario Arellano de Bonilla, became part of a coffee-growing culture renowned for producing exceptional coffees. In a region blessed with fertile soils, high elevations and ideal growing conditions, they built a life grounded in hard work, integrity and respect for the land.

These values became the foundation of a family tradition that continues to this day, passed through generations, across oceans, and into every cup we serve.

In Their Words

“Don Adán Coffee stands as a bridge between producing and consuming countries, between heritage and innovation, and between generations connected by a shared passion for coffee.”

Gerard & Sharon Barrios, Founders

A name more than 150 years in the making

Every family has a story. Ours begins with a name.

For generations, the Barrios name has been connected to coffee in Central America. Our family proudly traces its heritage to Gerardo Barrios, the 19th-century President of El Salvador whose vision and advocacy helped establish coffee as one of the defining industries of the region. Inspired by the agricultural advancements he observed abroad, he championed coffee cultivation and helped lay the foundations for an industry that would shape Central America’s economy and culture for generations to come.

More than 150 years later, coffee continues to shape our family’s story.

The Barrios family in Marcala

That legacy found its way to the mountains of Marcala, Honduras, where our great-grandparents, Adán Bonilla Contreras and Rosario Arellano de Bonilla, became part of a coffee-growing culture renowned for producing exceptional coffees. In a region blessed with fertile soils, high elevations and ideal growing conditions, they built a life grounded in hard work, integrity and respect for the land. These values would become the foundation of a family tradition that continues to this day.

Their work was carried forward by our grandfather, Israel Barrios Castro, who became deeply involved in the buying and trading of coffee throughout Honduras and El Salvador. Through his work with growers, exporters and international markets, including his involvement with La Curacao, he developed relationships and knowledge that connected coffee communities across the region. His understanding of coffee extended beyond cultivation and trade; he understood the people, families and livelihoods that depended on it.

Gerardo Adán Barrios Bonilla and specialty coffee

The next chapter belonged to Gerardo Adán Barrios Bonilla, whose vision helped position the family at the forefront of Honduras’ emerging specialty coffee movement.

At a time when much of the coffee industry remained focused on volume production, Adán recognised the potential of premium coffee varieties and quality-driven cultivation. He became an early advocate for specialty coffee in Marcala, Honduras, encouraging the planting and development of distinguished varieties such as Pacamara and Bourbon while promoting modern farming and processing techniques designed to improve quality and consistency.

Working closely with producers and cooperatives, he helped foster a culture of innovation that would contribute to Honduras’ growing reputation as one of the world’s most respected specialty coffee origins.

Australia and the birth of Don Adán Coffee

In the 1990s, the family’s coffee journey reached Australia. Gerard and Sharon Barrios started importing Adán’s Coffee into Australia and soon after began coffee roasting as Estate Coffee, creating the brand Don Adán Coffee to honour the patriarch.

At a time when direct relationships between producing countries and consuming markets were still uncommon, Gerard Barrios became one of Australia’s early independent coffee importers dedicated to building transparent connections between coffee growers, exporters, roasters and consumers. Long before direct trade became a widely used industry term, he was travelling between origin and market, developing relationships that prioritised quality, trust and long-term partnerships.

In 1999, the family opened its first café in Sydney. What began as a simple ambition, to share exceptional coffee and the heritage behind it, grew into an award-winning business built on authenticity, hospitality and craftsmanship.

A new generation

Today, a new generation continues the story.

Gerardo Barrios Jnr now plays a leading role in operating the family’s cafés, bringing fresh energy while preserving the traditions that have guided the business for decades. Alongside him, Lana Barrios continues the family’s involvement in coffee and hospitality, helping extend the Barrios legacy across continents and generations.

Together, they represent the next chapter of a family whose roots stretch from the coffee mountains of Central America to the café culture of Australia.

Today, Don Adán Coffee stands as a bridge between producing and consuming countries, between heritage and innovation, and between generations connected by a shared passion for coffee.

What We Stand For

Our values

Transparency

Every lot we sell, green or roasted, comes with full origin information, farm details, processing method, and harvest data. We believe you should know exactly where your coffee comes from.

Direct Relationships

Long before direct trade became a widely used industry term, Gerard Barrios was travelling between origin and market building relationships that prioritised quality, trust and long-term partnerships, not transactions.

Quality Without Compromise

From the elevation at which we grow to the temperature at which we roast, every decision is made in service of flavour. The Barrios Estate has won multiple national awards, and we intend to keep earning them.

Community

Our cafés are community spaces first. Live acoustic evenings, all-ages events, and a genuine welcome for everyone. Coffee is how we start the conversation, and community is why we keep having it.

Heritage

Don Adán is not a brand identity. It is a name and a legacy. We carry the responsibility of a family story stretching back more than 150 years in every cup we serve.

Two Continents, One Story

Honduras and Sydney are separated by 14,000km. Our job is to make that distance feel like nothing: to connect the people who grow the coffee with the people who drink it, honestly and directly.

Taste the story for yourself.

Our roasted coffee ships fresh across Australia. Every bag tells you exactly where it came from, who grew it, and how it was processed, because we are the ones who grew it.
